Cookie Friday #2

Day 71.

Today, I tried to replicate a Girl Scout favorite, the Thin Mint. As the mother of a Daisy, this project made me feel a bit like a traitor. As a frugal homemaker, this project made me feel like an Olympic medalist. Victory is mine. Look out, $3.00 box of so few cookies! I can make my own now.

I used Top Secret Recipes' version and they came out nearly identical to the Girl Scout version. Mine were slightly bigger...but that just added to their majesty.

Top Secret Recipe for Girl Scout Thin Mints Clone

Ingredients:
  • 1 box of Betty Crocker Triple Chocolate Fudge cake mix
  • 3 Tbsp of melted shortening
  • 4 Tbsp water (recipe calls for 3, but I used 4)
  • 1 large egg
  • 12 oz bag semi-sweet chocolate chips (recipe calls for THREE bags. WAY too much)
  • 1 tsp peppermint extract (recipe calls for 3/4 tsp)
  • 2 Tbsp shortening (recipe calls for 6 Tbsp but I reduced the chocolate chips, so I also reduced the shortening)
How it's Done:
  1. Combine cake mix, melted shortening, water, and egg. Beat until batter forms.
  2. Roll into a log on waxed paper and refrigerate 2 hours.
  3. Cut into 1/8th" thick rounds using a serrated knife and gentle sawing motion. Place on greased cookie sheets.
  4. Bake at 350 degrees for ten minutes. Remove from cookie sheets and allow to cool. Cookies will get crisp as they cool.
  5. In the microwave, melt the chocolate and shortening. Stir in the peppermint extract.
  6. Using a fork, dip the cookies into the melted mint chocolate.
  7. Let the excess coating drip off, then move cookies to waxed paper-lined cookie sheets. Move to refrigerator to cool and harden.

  3. I'm the mom of a Daisy too, but her troop didn't sell cookies this year. Therefore I feel no shame at all for "rolling my own". ;) Thanks for the recipe!

  6. Yep, these are definitely worth making! They're pretty easy to make as far as cookies go, and the taste is very rewarding. :o) Amy, let me know how they come out!

  7. Mine are all done and my husband thinks they are To.Die.For! He did request I try it with dark chocolate next time, so I will. My cookies are in the freezer, that's our favorite way to eat thin mints :)
