Here's what we're eating this week:
Monday:
Breakfast: wheat cereal with strawberries and coconut milk
Lunch: Salad with pecans and cranberries & cheddar twists
Dinner: Chili (packed with veggies!) and polenta
Tuesday:
Breakfast: wheat cereal with strawberries and coconut milk
Lunch: chili and pretzels
Dinner: soybean & rice burritos with fresh peppers and tomatoes, lettuce, cheese, and sour cream
Wednesday:
Breakfast: bagels with cream cheese, grapes, and orange juice
Lunch: Summer Corn Salad & cheddar twists
Dinner: Cheeseburgers and onion rings
Thursday:
Breakfast: eggs, sausage, and biscuits
Lunch: Leftovers
Dinner: black Beans & Rice with lettuce, tomato, onions, and peppers
Friday:
Breakfast: Oatmeal and Orange Juice
Lunch: Veggie Burgers with Sweet Potato Coins and grapes
Dinner: Steaks on the Grill, Grilled Onions, and Roasted Broccoli
Dessert: Coconut Custard
Saturday:
Breakfast: Waffles with Berries and Syrup
Lunch: Lentil & Rice Tostadas with fresh veggies
Dinner: Chicken & Broccoli Bake
Dessert: Mini Maple Cupcakes
Sunday:
Breakfast: Eggs & Bacon on English Muffins
Lunch: Leftovers
Dinner: Meatloaf, Rice, and Sweet baby carrots
Dessert: Banana Rice Pudding

YUM! As always, your menu sounds great! I'm interested to see your chili recipe - hope that's one you're going to share.
I love salad - especially with pecans or walnuts in it. We had been doing salad for dinner once a week.
I will be sharing my corn chowder recipe, it should be later in the week! Red Robin is my favorite too, I'm glad he picked that instead of McDonald's. ;)

Everything sounds so good! I use coconut oil in my cooking, but I've never tried coconut milk. Is it sweet? I'm not sure I've even seen it in the stores... I'm sure it's more healthy for us then regular milk though.

I've been thinking about trying coconut milk too, but after the soy milk and rice milk went down in flames with the family, I'm a little gun shy. Do the kids like it much?

My girls do like it. BUT...they like soy milk, rice milk, and almond milk, too. We don't use any of them (except for chocolate soy and almond milk) as a beverage. We use them in recipes and on hot and cold cereals.
cant wait for the recipe for the maple muffins and the lentil tostadas...i bought lentils for the first time and now need something to do wit them!
Monday's salad is very similar to one of my favorite salads. Instead of cheddar, I add goat cheese crumbles. yummy.
