This is not diet food.
It is, however, a wonderful side dish or supper on a cold day. We eat it as a meal with a hunk of cornbread. It's filling and bacon-y and warm and onion-y. It's not pretty. But it tastes really, really good.
And it's dirt cheap.
Fried Cabbage with Bacon and Onion
serves 6 as a meal or 10 to 12 as a side dish
Ingredients:
- 1 head of green cabbage, chopped into bite-size bits
- 1 lb bacon, chopped into bite-size bits
- 1 medium onion, chopped
This recipe is very easy to throw together. First, fry your bacon in a very large pot until crisp. DO NOT DRAIN THE FAT! When the bacon is crispy enough for your taste, add the onion. Fry it up for several minutes until it softens up a bit, then add in your cabbage. Stir the cabbage around to get it coated in bacon, onion, and grease. Now cover the pot and reduce your heat to medium-low. Cook it for 45 minutes to an hour, stirring occasionally, until the cabbage is nice and tender.

I have made this for years to stretch our budget. Sometimes I will cut up a package of turkey smoked sausage and add it to the cabbage. It makes it stretch even more and tastes so good. I found your blog via orgjunkie and I love it! Thanks for sharing great recipes.
