Quinoa* Breakfast Cereal
What You Need:
- 1 cup cooked quinoa
- 1 cup milk (I used almond milk)
- 1 Tbsp honey
- 2 Tbsp chopped dried fruit (I used figs)
- 2 Tbsp chopped nuts (I used walnuts)
- 1 tsp ground cinnamon
- 1/2 cup fresh fruit (I used blueberries)
How it's Done:
- First, you'll need to prepare your quinoa. Rinse it well, then bring to a boil and simmer as package directs. One cup of quinoa and two cups of water will give you roughly 3 cups of cooked quinoa.
- Next, combine cooked quinoa with the milk, honey, dried fruit, nuts, and cinnamon. Simmer until thickened, about ten minutes.
- Remove from heat and stir in fresh fruit.
*Quinoa is a delicious grain that I would describe as nutty in flavor. It's very healthy and readily available online and in whole foods/health foods stores.
