Not really pie for lunch, but close.
Have you noticed yet that I tend to cook things that use the same ingredients? I try to save money by making the most of what I have. Green onions, sour cream, lettuce, cheddar cheese, tomatoes, and salsa: All of these have been used in many of my recipes over the past seven days. Use it up before it goes bad! Save those food dollars. Try to plan your own menus this way. It can even save you time if you prepare the whole lot at once (for example, slicing all of your green onions at once).
This lunch goes together quickly and it's nice to look at. And delicious. Of course.
Savory Santa Fe Tart
serves 6
Ingredients:
1 pie crust
can of black beans, rinsed and drained
1/2 cup salsa
2 Tbsp chopped fresh cilantro
1/2 cup shredded cheddar cheese
2 green onions, chopped
1/2 a tomato, diced
shredded lettuce
sour cream to top if desired
How it's Done:
Preheat your oven to 400 degrees.
Prepare a pie crust (or unroll one you bought from the store) and place in a pie dish or on a baking sheet.
In a bowl, combine beans, salsa, and cilantro. Pile this mixture onto your pie crust, leaving a 1 1/2" border around the whole crust.
Fold up the border over the edge of the filling. You will make pleats in the dough as you continue around the circle.
Sprinkle cheese over top.
Bake for 25 to 30 minutes until crust is golden brown.
Top with green onions, tomatoes, lettuce, and salsa. Cut into wedges and serve.
